Tucked into the lounge of PURO Warszawa Stare Miasto in Warsaw, MUND opened in 2025 as something harder to label than a typical hotel restaurant.
Bakery in the morning, lunch spot by midday, wine bar past four, rooftop and patio when the weather cooperates. The name comes from the old Norse word for "mouth," which tells you roughly where its head is at.
The space was designed by GamFratesi, the Copenhagen studio run by Danish architect Stine Gam and Italian designer Enrico Fratesi, who handled both the architecture and interiors of the hotel that houses it. Custom veneered cabinets, wood-panelled walls and ceilings, a run of locally sourced artwork. GamFratesi has said the muted, earthy palette was a deliberate nod to Bernardo Bellotto — the 18th-century Italian painter better known here as Canaletto — whose views of Warsaw gave nearby Canaletta Street its name. It's a quiet piece of context-setting: a Danish-Italian studio referencing an Italian painter on a Warsaw street named after him, folded into a restaurant that's doing the same cross-cultural thing on the menu.
Chef Kamil Mateńka runs the kitchen. Lunch is built around smørrebrød, the open Danish sandwich, changed up with the seasons. Dinner is a bit more ambitious — fish, stews, a version of Norway's classic fish soup — but still working from the same premise that good Nordic cooking doesn't need to dress itself up much. Pastries carry through the whole day, bakery in the morning, something sweet with coffee or wine later on.
The wine bar, open daily from 4pm until late, might be the best read on what MUND is actually going for. It's looser than the dining room, the kind of place you'd duck into on a whim rather than book weeks ahead. The rooftop and patio do something similar in warmer months — low-key extensions of the same idea rather than separate attractions.
